Triple Chocolate Fudge ‘Protein’ Brownies
These delightful brownies are a treat that packs a protein boost. Easy to make and versatile, they make the perfect snack or dessert. Enjoy them with a dollop of cream and fresh fruit, or pair them with yoghurt or ice cream. But they're just as delicious on their own, making them the ideal on-the-go snack.

Ingredients:
200 grams Chocolate protein powder
130 grams Wholemeal flour
130 grams Light brown sugar
100 grams Coconut oil
60 grams Dark chocolate chips
60 grams Milk chocolate chips
60 grams White chocolate chips
60 grams Fudge chunks
2 Eggs
2 tablespoons Water (optional)
1/2 teaspoon Vanilla extract
Method:
Preheat the oven to 180°C.
Line an 8x8 square pan with non-stick baking paper.
Mix the flour (130g) and protein powder (200g) in a medium bowl.
Place 30g of each type of chocolate chip, 30 grams of fudge chunks and the coconut oil (100g) in a bowl and microwave for 30-second increments until melted. Then stir until smooth.
Add the sugar (130g) to the chocolate-oil mixture and stir until combined.
Add the 2 eggs and 1/2 teaspoon of vanilla to the chocolate mixture and stir until smooth.
Fold the flour-protein mixture into the chocolate mixture until thoroughly incorporated.
If the consistency is too thick add 2 tablespoons of water to the batter or more if necessary. The batter should look similar to this.
Pour the batter into the prepared pan and sprinkle the remaining chocolate chips and fudge chunks over the top.
Bake for 25-30 minutes or until a toothpick or knife comes out clean.
Cool, then cut into squares and serve.

Flour can be substituted for almond flour.
Light brown sugar can be substituted for coconut sugar
